Simple Tart Recipe

Tart’s are super easy to prep for and take very little time to cook in the oven, making them perfect for a midweek meal, or even if you’re entertaining guests. For me, this is a definite go-to any day of the week because it’s such a simple recipe. Not only are tart’s fairly cheap to create from scratch, they take no time at all – just approximately half an hour of your time – so it’s perfect if you’re busy with work, or are a student.

A smoked salmon, spinach and cream cheese tart is a great meal option. Not only is it healthy, it is rich in protein, vitamins B and D and good fats, which can help protect you against depression, memory loss and even dementia (which is caused by an Omega-3 fatty acid deficiency). If smoked salmon isn’t your acquired taste, there are numerous substitutes you could use, including other fish such as trout or mackerel, or meat such as ham or bacon.


Recipe

Prep time – 15 minutes | Cooking time – 15 minutes1914_1

Ingredients (for two)

  • 375g fresh ready-rolled puff pastry
  • 150g spinach
  • 200g tub light cream cheese
  • 100g smoked salmon

Instructions

  1. Preheat the oven to 200C/180C (fan)/gas 6
  2. Unroll the puff pastry and cut into two 15cm circles, place on a baking sheet. Prick the rolled pastry several times
  3. Put this in the oven and bake for 8 minutes until risen and golden in colour
  4. Whilst the pastry cooks, put the spinach in a colander and pour boiling water on top until it begins to wilt, then refresh under cold water. Squeeze the excess water out
  5. In a bowl, mix the cream cheese until smooth. Then cut the smoked salmon into strips and add to the bowl. Lastly, add the spinach
  6. Season the contents of the bowl with black pepper and mix
  7. Spoon the contents evenly into the cooked pastry base and return to the oven for a further 5-7 minutes – depending on how crispy or hot you prefer the contents
  8. Place the tarts on a plate and serve

My serving tips: Depending on the occasion, this can vary. Tart’s can be served on their own, but I would suggest adding a mixed salad for a healthy balance. However, if you’re aiming for a more hearty meal, serve with new potatoes, Mediterranean vegetables or even sweet potato fries (a delicious healthy alternative to normal fries).
